Thai Veggie Curry

This curry has been a staple in my home for many years. Thai food is one of my husband’s favorite cuisines and I knew I’d have to find a way to make a few dishes at home. Thankfully @traderjoes has created some shortcuts to be able to make one of our favorite takeout dishes at home.

Thai Veggie Curry

Ingredients

  • 1-2 tbsp of coconut or avocado oil
  • 1 bottle of @traderjoes red curry sauce
  • 1 can of @traderjoes coconut cream
  • 1 tbsp of minced garlic
  • 1/2 tbsp of minced ginger
  • Chop all veggies into bite sized pieces
  • 1/2 red bell pepper
  • 1/2 yellow bell pepper
  • 1/2 orange bell pepper
  • 1/2 cup of shredded carrots
  • 1/4 cup of green onion chopped
  • 1/2 cup of @traderjoes soycutash
  • 1/2 cup of chopped green beans
  • 1 lime

Instructions

Heat a large pan on medium heat and add your choice of oil.

Then add the garlic and ginger paste and cook for a bit until fragrant.

Next, add all the chopped veggies (except the green onions) and cook for a few minutes, but keep the texture crisp.

Finally, add the @traderjoes red curry and the can of @traderjoes coconut cream and stir.

At this point the curry is done and you should heat everything through and add the green onions.

Serve with rice or even cauliflower rice.

Add a squeeze of lime juice for an extra tang. Enjoy!
