Easy black bean enchiladas

Don’t panic. I have the perfect recipe for all the canned beans you all went and stocked up on. Ha! Okay, no seriously I have a yummy recipe I whipped up with @traderjoes refried black beans with jalapeños. I got one piece… my husband ate the whole pan.

Easy black bean enchiladas

Ingredients

  • 1 can of @traderjoes refried black beans with jalapeños. Or any other brand you prefer.
  • 1 shallot - minced
  • 1 tsp of cumin seeds
  • 2-3 cloves of minced garlic
  • 2 tbsp of avocado oil
  • 1/2 packet of your favorite taco seasoning
  • 4-5 soft tortillas
  • 1 can of your favorite red enchilada sauce. I used @oldelpaso
  • 1 bag of @kraft_brand Philadelphia Mexican melting cheese
  • 1/4 cup of chopped fresh cilantro

Instructions

In a medium-sized pan, heat your avocado oil and add your minced shallots, garlic and cumin seeds.

Cook for a couple of minutes and then add your can of beans and your seasonings.

Stir well and add chopped cilantro for freshness and let all the flavors blend through.

In an oven-safe pan, spray the pan with a nonstick spray and start building your enchiladas.

Take a tortilla, top it with the beans, a layer of cheese, roll it up and put it in the pan. And repeat until your pan is full.

Once all the enchiladas have been rolled, top them all with the red sauce and the cheese.

Put it in the oven for about 20-25 minutes on 350 degrees and let all the ingredients blend and the cheese melt.

Serve hot with fresh cilantro, pico de gallo, sour cream and guacamole.

I also topped it with cilantro lime chili mayo. It’s delicious!

Notes

Optional: In a small pot, heat your enchilada sauce until it comes to a boil. The sauce will also heat through in the oven once you place it on the enchiladas. You can also heat your tortillas in a pan before assembling your enchiladas.
