Garlic Chili Noodles

Okay so we’ve been eating a lot of noodles in this house recently. The kids just love my teriyaki noodles, so I’ve had to get creative in coming up with different variations where I can add spice for the adults in this house! For this dish you can remove the @traderjoes chili bamba and this dish can still be kid friendly!

Garlic Chili Noodles

Ingredients

  • 2 large, boneless, skinless chicken breasts. (Boiled or baked - shredded, or you can even use store bought rotisserie chicken).
  • 4-5 cloves of minced garlic
  • 1 shallot minced
  • 1 cup of bell peppers chopped (I used multiple colors)
  • 1 cup mixed frozen or fresh veggies (I used a mix of corn, carrots, and peas). Really, you can use any veggies you have.
  • 1/2 cup of green onions chopped
  • Sesame oil
  • Canola oil
  • 1 Box of whole grain noodles or regular spaghetti
  • 3-4 eggs (scrambled and fried)
  • 3 to 4 tbsps of @lachoysoysauce light soy sauce
  • 2-3 tsp @shanglobalfoods Chinese chowmein seasoning
  • 2 tbsp of @traderjoes chili onion crunch
  • 2 tbsp of @traderjoes chili bamba
  • Black pepper or red chili flakes

Instructions

Heat a large wok over medium heat and add a tbsp of both sesame oil and canola oil.

Once the oil is hot, add shallots.

Cook until they are translucent.

Then, add the garlic and stir until fragrant.

Add in the rest of the veggies, a pinch of salt and pepper, and cook until they have slightly softened.

I like my veggies to have a bit of a crunch to them but you can cook it to your desired doneness.

Then, add the shredded chicken, pepper, soy sauce, Chowmein seasoning, chili onion crunch, chili bamba and let the chicken cook with the rest of the flavors in the wok.

Add the cooked noodles, a little more seasoning (to taste), soy sauce, 1 more tbsp bamba chili (if you can handle the heat) and another tbsp of sesame oil and toss it all together.

At this point, lower the heat and cook for another 2-3 minutes.

Make sure everything is mixed well.

Taste and adjust seasonings as needed.

While that’s cooking, fry a couple of eggs in canola oil.

Season with salt and chili flakes.

Put the noodles in a bowl, top with scallions, a fried egg and serve!
