Cajun Chicken Pasta

Dinner was a hit last night with the whole family. I used to make this pasta quite often when we first got married, but it’s been a minute since it’s been on our weekly menu. Now that the kids love a bit of spice, I can make this dish for the whole family to enjoy! This is another recipe that is ready in less than 30 minutes!

Cajun Chicken Pasta

Ingredients

  • 4 thinky sliced chicken breasts
  • 1 box of @barillaus rigatoni pasta
  • 2-3 tbsp of Cajun seasoning
  • 1 tsp of @traderjoes chicken-less vegan seasoning
  • Zest of 1 lemon ?
  • 2 tbsp of olive oil
  • 1 tsp salted butter
  • 3-4 large cloves of garlic minced
  • 1 cup of @raoshomemade Alfredo sauce
  • 1/3 cup of pasta water
  • 1/4 cup shredded Parmesan cheese
  • Salt
  • Topping
  • 2 small tomatoes chopped
  • 1/4 cup of green onions chopped
  • Lemon slices
  • Parmesan cheese
  • Black pepper

Instructions

Start by placing your thinly sliced chicken on a plate and sprinkle your Cajun and chicken less seasoning all over the top.

Pat the seasoning for a bit so it sticks to the chicken.

Fill up a large pot with water to boil your pasta.

Heat the pot on high heat with the lid on and add salt.

While that’s coming to a boil, heat a large pan, add olive oil and butter.

Once the butter becomes foaming, add your chicken in, seasoned side down, and let it cook.

Season the other side of the chicken while you’re waiting for it to cook.

Once the water comes to a boil, add the pasta in and stir.

Cook until the pasta is al dente. Reserve one cup of pasta water before draining the pasta. You will need this for later.

Once the chicken is cooked, put the heat on low and remove the chicken from the skillet to your cutting board and let it rest.

Add the minced garlic to the skillet and continue to sauté for about 2 minutes while stirring.

Add the Alfredo sauce and 1/2 cup of the pasta water to the pan and stir well.

Making sure to dissolve any browned bits from the bottom of the skillet. That’s where all the flavor is hiding!

Next, add the pasta, stir just until everything is evenly combined.

Turn the heat off and add parmesan cheese and mix well.

Slice or dice up your chicken once it has rested.

Top the pasta with chicken, tomatoes, green onions, and lemon juice.
