Gluten Free Gyros Pizza

It’s Friday and that means pizza night in our house! I’m redoing an old classic here and making some delicious, spicy pizzas for the fam! I’ll be leaving out the giardiniera peppers for the kiddos ?

Gyros Pizza is all of your favorite Greek gyros flavors in the form of a pizza. I've made this version a bit healthier by making it gluten free.

Ingredients

  • 1 Plain cauliflower crust
  • 1/2 Cup of marinara sauce
  • 8 to 10oz of frozen gyros meat
  • 1/5 Cup Spinach
  • 3 Tbsps banana peppers
  • 3 Tbsps of giardiniera
  • 3 Tbsp of chopped red onions
  • 1 Cup of whole milk mozzarella cheese
  • 1/5 Cup of parmesan cheese
  • Olive oil to drizzle
  • flaky sea salt
  • chili flakes

Instructions

Start by heating your oven on 350 degrees.

Once the oven is heated, bake your crust off according to the instructions. It usually takes about 10-15 minutes.

While that's baking, prep your ingredients for the topping. Heat a shallow pan on the stove on medium heat and lay the gyros meat in a single layer. Cook on both sides until cooked through. No oil should be needed. The gyros meat should release some oils in the pan.

Now, prep all of your vegetables. Chop the spinach, banana peppers, onions, and giardiniera peppers and keep it on the side.

Once the crust is baked off, top with the marinara sauce, followed by all of the toppings and then the cheese.

Drizzle with some olive oil and bake in the oven for 15 minutes and broil for 5 minutes until the cheese and brown and bubbly.

Top with some sea salt and chili flakes and enjoy!
