This one is as easy as it can get! One pan meals for the family are so great these days! The less dishes the better!

Sheet pan salmon and potatoes

Ingredients

  • 4 boneless skinless salmon fillets
  • 3 cups of Yukon gold potatoes without the skin
  • 5-7 cloves of fresh garlic-minced
  • Onion salt
  • Black pepper
  • Cajun seasoning
  • Avocado oil or canola oil
  • 2 Lemons
  • Parsley
  • Chives

Start by heating your oven to 425 degrees and prepping your potatoes.

Cut your potatoes in bite size pieces and I actually partially boiled my potatoes or you can microwave them for 2 minutes to just get them a little tender. This really helps them crisp up in the oven with the salmon.

After the potatoes are tender, place them in a bowl, toss with 2 tsp of fresh garlic, oil, onion salt and black pepper and place them on a baking sheet.

Then, place your salmon fillets along the side and coat with a little oil, fresh minced garlic and coat in cajun seasoning.

Press down to make sure you create a crust. If you don’t like cajun seasoning, you can simply season with black pepper, salt, paprika and onion salt.

Once everything is seasoned, bake for 15-20 minutes depending on the thickness of your salmon.

Give the salmon a generous squeeze of lemon juice and garnish with chopped chives once it’s out of the oven and serve. Enjoy!
