Kale and Garbanzo Bean Salad

This is easily one of my favorite salads and it’s so easy to make. I had a version of this salad on a girls weekend recently and I just had to recreate it!

Kale and Garbanzo Bean Salad

Ingredients

  • 4 cups of kale or a pre-made kale blend you like - chopped
  • 1 cup of green onions - chopped
  • 4 Hard boiled eggs
  • Shredded Parmesan cheese
  • 1 can of organic garbanzo beans
  • Juice of 1 lemon
  • Hand full of pistachios
  • Salt
  • Pepper
  • Pinch of chili flakes
  • For the garbanzo beans...
  • 1 tbsp of @traderjoes elotes seasoning
  • 1/2 tbsp paprika
  • 1/3 tbsp of garlic powder
  • 1 tbsp of avocado oil
  • 1 tbsp of extra virgin olive oil

Instructions

Garbanzo Beans

In a medium to large sized skillet, heat your avocado oil and add your rinsed garbanzo beans.

Once coated in the oil, add your elote seasoning, paprika, garlic power, salt and pepper and roast until the spices are fragrant and the beans are toasted. Remove from heat and set aside.

Salad

Assemble your salad by adding your greens, onions, garbanzo beans, cheese and pistachios.

Top and toss with lemon juice, olive oil and chili flakes.

Add more salt and pepper to taste. Enjoy!
