Chicken Tikka Fajitas

Happy taco Tuesday or should I say fajita Tuesday? ??‍♀️ I’m really missing just eating out so I’m getting creative with our meals. This one is a winner and uses ingredients most of you might have in your fridge and pantry already.

Chicken Tikka Fajitas

Ingredients

  • Marinade
  • 3 large chicken breasts (boneless/skinless)
  • 1/4 cup of whole milk Greek yogurt
  • Juice and zest of one whole lemon
  • 3 tbsps @shanfoods chicken tikka masala
  • 2 tsp paprika
  • 2 tsp cumin
  • 1 tbsp of @shanfoods ginger garlic paste
  • 2 tbsp extra virgin olive oil
  • Other ingredients
  • Salt
  • Pepper
  • Olive oil or canola oil
  • Red bell pepper
  • Red onion
  • Green onions
  • Jalapeños
  • Rotis or tortillas to serve with

Instructions

Slice half of a red onion and a whole bell pepper, along with some green onions and jalapeños.

Toss all the veggies in a bowl, add 2 tsps of oil and some salt and pepper.

Sear the chicken in a grill pan or even a nonstick pan with all your veggies until the chicken is cooked and the veggies have a char.

You can serve it with some rotis or in a tortilla.

My daughter Hannah likes to eat this dish with some rice and yogurt. Hope you all love it!

Notes

To really get the best flavor, I marinate the chicken overnight. When pressed for time which is the norm these days, I marinate just a few hours before I have to cook it. A lot of times, I keep a packet marinated in my freezer for a super quick dinner.
