The week just started and it’s already been so crazy. I tried to meal prep early on in the week so it makes lunch time quick and easy. Instead of buying a bunch of ready-made items from the deli, I make this chicken salad and keep it in the fridge to make quick sandwiches, or as a topping to my salads. The good part about this recipe is you can use a ready-made rotisserie chicken, boiled chicken, or roasted chicken.

Curried Chicken Salad
Ingredients
- Filling Ingredients
- 2 cups of shredded cooked chicken
- 1/2 cup of chopped bell peppers
- 1/4 cup of chopped celery
- 1/4 cup of chopped grapes
- 1/4 cup of green onions
- 1/5 cup of raisin and dried cherry mix
- 1/5 cup of curried seasoned cashews @traderjoes
- 1/4 cup of chopped parsley (optional)
- Dressing
- 1/3 cup of avocado mayo (you can add more if you’d like)
- Juice and zest of 1 lemon ?
- 2 tbsp of honey mustard
- 1/2 tsp of olive oil
- 1/2 tsp of curry powder
- 1/4 tsp of onion powder
- 1/4 tsp of garlic powder
- 1/4 tsp of paprika (optional)
- Salt and black pepper to taste
Instructions
In a large bowl, start by adding all of the ingredients for the dressing and whisk well.
Make sure to taste for seasoning.
Then add all of the ingredients for your chicken salad and fold everything in well.
This mixture is the perfect blend of savory, tangy and sweet!
Serve in between slices of bread or even on top of lettuce for a carb free lunch!
