Chicken Corn Soup

This is a recipe that’s close to my heart. My mom and grandma have made this soup ever since I was a baby and now I can pass this on to my babies! Hope you enjoy this soup as much as my family does. ❤️

Chicken Corn Soup

Ingredients

  • 2 large organic chicken breasts
  • 5-6 cups of water
  • 1 can of sweet corn or 1 cup of frozen corn
  • 2-3 tbsps of soy sauce
  • 1 tsp of salt
  • 1 tsp of pepper
  • 1 tsp of onion salt (@traderjoes)
  • 1/2 tbsp of the vegan chicken less seasoning (@traderjoes)
  • 2 tbsp of corn starch
  • Green onion - for garnish

Instructions

In a medium sized pot, boil the chicken breasts in water.

Once the chicken is cooked, take it out of the chicken broth and shred in a separate bowl.

Then strain the broth into a large bowl, place it back into the pot, and bring it to a boil.

In a separate bowl, mix the corn starch with 1/2 cup of water. Make sure there are no lumps.

Add to the broth into the pot while stirring. Bring to your desired thickness.

Add the chicken, 3/4 can of sweet corn, soy sauce, and the seasonings and stir.

In a small blender, blend the remaining kernels of corn with a little water and add to the soup for an additional texture.

At this point you can adjust for seasoning to bring it to your liking.

Serve hot with some vinegar, soy, chili garlic paste or just by itself! Enjoy!
