This weeks meal plan – I’m using staples from my freezer to make quick dinners. Salmon is always in my freezer. I usually keep a batch of marinated salmon or chicken to whip up a quick dinner.

Salmon Tikka
Ingredients
- Marinade
- 3-4 large salmon fillets (boneless/skinless)
- 3 tbsps of whole milk Greek yogurt
- 2 tbsp of fresh lemon juice
- 2 tbsp @shanfoods chicken tikkah masala
- 2 tsps paprika
- 2 tsps cumin
- 1 tbsp of @shanfoods ginger garlic paste
- 2 tbsp extra virgin olive oil
- Salt
- Pepper

Marinate the salmon just a couple of hours before cooking, or you can marinate it over night if that’s easier.

Sear the salmon in a cast iron or even a nonstick pan with some green onions.

Serve it over rice or with some rotis (Indian flat bread). Enjoy!
