Chocolate Peanut Butter Breakfast Muffins

Its been a week in this house and its only Wednesday! We are always looking for a quick breakfast around here, so these muffins were just perfect. Did I mention these are gluten free and full of chocolatey goodness?

Chocolate Peanut Butter Breakfast Muffins

Ingredients

  • 1 box of @simplemills chocolate muffin mix
  • 2 eggs
  • 1/3 cup coconut oil or butter
  • 1 very ripe banana – mashed
  • 2 tbsps of flaxseed meal
  • 1/3 cup all natural crunchy peanut butter @traderjoes
  • 1 tbsp of vanilla
  • ¼ cup chocolate chips (optional)

Instructions

Preheat your oven to 350 degrees.

Pre-line your muffin pans or spray them with a coconut nonstick spray to prevent the muffins from sticking.

Then in a large bowl, mix the melted coconut oil or butter, banana, vanilla, and eggs.

Next add the muffin mix, flaxseed meal, chocolate chips and mix well.

Fill each muffin tin a little over halfway and dollop ½ tbsp of peanut butter in the center of each muffin.

Bake on 350 degrees for 15 – 20 minutes or until the toothpick comes out clean.

Keep in an airtight container for up to 4 days. Enjoy!
