Blueberry Peach Crumble

Who doesn’t love a crumble? It’s the perfect dessert for any season and it’s the perfect way to use up all the fruit going south in your fridge. My family didn’t wait for the crisp to even cool before diving in!

Blueberry Peach Crumble

Ingredients

  • Filling
  • 4 peaches, diced
  • 1-2 cups fresh blueberries
  • 1 tsp ground cinnamon
  • 1 tbsp of cornstarch
  • 1/5 cup coconut sugar
  • Juice of one lemon
  • Topping
  • 1 cup rolled oats, or granola mix
  • 1/3 cup flour or almond flour
  • 1/4 cup coconut sugar or brown sugar
  • 2 tsp ground cinnamon
  • 1/4 cup coconut oil or melted butter

Instructions

Combine all filling ingredients in a medium bowl.

Let them sit for about 5 minutes while you preheat the oven to 350°.

In another bowl combine oats, flour, sugar, cinnamon and butter.

Mix well. (I usually use my hands to make the mixture nice and crumbly.)

Spray baking dish with nonstick spray and add the pie filling into the pan.

Top with the crumble topping.

Bake for 40 minutes or until the crisp topping is golden and the fruit is bubbly.

Spoon out the warm crumble into bowls and serve with vanilla ice cream or whipped cream!

Notes

For a match made in dessert-heaven, pare this with ice cream or tangy blackberries & lush blueberries.
