Every country and nation has their own comfort foods. In South Asia, Khichdi is one of the most popular comfort foods amongst those from Pakistan, Indian, and Bangladesh. Growing up my mom would make a version of Khichdi every week. The whole family would have it either with butter, achar, or milk. I’ll admit I wasn’t always the biggest fan of this dish until I had children of my own, and I then made it to taste the way I enjoyed eating it the most. Now I kid you not, every single week without fail, Hannah will ask me to make her Khichdi because she loves it so much. I’m happy that my little nephew Kayden loves eating it too. Its so quick, simple and nutritious – I love making this comforting dish in 10 minutes on a busy week night in my Instant Pot!
Daal Khichdi
So what is Khichdi? While every family has their own versions, it is basically a savory porridge of lentils, rice, spices and Ghee or butter. A lot of the time this is a dish that's used for babies, older family members, and even as a porridge to heal the sick because it's easy to eat and contains turmeric which has known healing properties.
Ingredients
- 1 tbsp of olive oil
- 1/4 cup yellow moong daal (mung beans)
- 1/5 cup of toor daal (split pigeon peas)
- 1/2 cup of long grain rice
- 1 tsp cumin seeds
- 2 tbsps of fried onions
- 1/2 tsp of black mustard seed
- 1/2 tsp of cumin powder
- 1/2 tsp of coriander powder
- 1 tsp of turmeric powder
- 1-2 tsp of salt
- 1 tsp of Shan daal masala
- 1/2 tbsp of ginger/garlic paste
- 4 cups of water
- 1-2 tbsps of salted butter - to finish the dish
Instructions
Before starting your Instant Pot, prep all of your ingredients in advance, including washing your rice and lentils.
Start your Instant Pot on sauté mode and add your olive oil.
Then add in your cumin and mustard seeds, onions, spices and toast for a few seconds.
Now add in your lentils, water, ginger, and garlic paste. Mix well.
Cancel the sauté mode, seal the Instant pot, and pressure cook for 8 minutes.
Once cooked, pressure release and open the Instant Pot.
Stir in the butter and serve warm.
