Coconut Easter Bites

Okay so I don’t know about you, but I’m in love with Almond Joy. Its been my favorite candy since I was a kid, and I had to find a way to make them healthier. I made this recipe into bars when I first started blogging back in 2015. Last week, I just turned them into the perfect easter dessert.

Ingredients

  • 1 (14 oz bag) of shredded organic coconut (use unsweetened for an even healthier dessert)
  • 2 large organic eggs - We love @OrganicValley
  • 1/2 (9 oz bag) of Lilys dark chocolate chips
  • 2 tsps of organic vanilla
  • 1 bag (10 oz bag) of chocolate Cadbury mini eggs
  • Coconut non stick spray

Instructions

Start by preheating your oven on 350 degrees.

In a large bowl, whisk together your eggs and vanilla.

Then add in your coconut and chocolate chips and make sure everything is coated well.

Spray your mini muffin pan or an 8x8 pan with a nonstick spray and add in your mixture. Make sure and press the mixture down well so it bakes evenly.

Bake on 350 degrees for 20 mins.

Let it the dessert cool fully before topping them with the mini Cadbury eggs and serve.
