Thai Basil Chicken

Winner winner Thai chicken dinner? Yes! My husband misses Thailand so he asked me to bring Thailand to him. I did it in record time – it took 25 minutes to make this dish that the whole family ate right up!! Not to mention it’s faster and healthier than getting takeout.

Ingredients

  • 2lbs Ground Chicken
  • 3-4 tbsp of Soysauce
  • 3 tbsp of garlic onion teriyaki sauce
  • 4 cloves of minced garlic
  • 1/2 tbsp of minced ginger
  • 1 tsp of cane sugar
  • 2 tbsp of sesame oil
  • 1 cup of basil
  • 1 large shallot - chopped
  • 3-4 mini red bell peppers
  • 1 tbsp of jalapeños (optional)

Instructions

Heat large skillet over high heat.

Drizzle in the avocado and sesame oil.

Add shallots, garlic, ginger and stir until fragrant.

Add ground chicken and stir fry until it is cooked.

Stir in teriyaki sauce, soy sauce, sesame oil, and cane sugar.

Continue cooking and stirring on high heat until some of the juices start to caramelize in the bottom of the pan (about 2 or 3 more minutes).

Add basil, bell peppers and jalapeños, stir until all the flavors have blended well together and caramelized.

Serve with brown or white rice! Enjoy!
