Cleaning out the fridge today and I found a ton of brown rice from this weekend. I started tossing a bunch of other things in a bowl and it turned out to be a delicious, nutritious salad. It was also a great way to use up rice when you’ve cooked too much and don’t know what to do with it besides throwing it out.

Veggie Brown Rice Salad
Ingredients
- 1-2 cups of cooked brown rice
- 1 cup of chopped baby spinach
- 1 cup diced cucumber
- 1/2 cup of chopped bell peppers
- 1/2 cup chopped green onion
- 1/3 cup chopped carrots
- 1/2 cup shaved Parmesan cheese
- 1 - 2 tbsp of extra virgin olive oil
- 1/5 cup of fresh lemon juice
- 1 tbsp of fresh mint (optional)

This salad couldn’t be simpler to make. Toss all of the rice and veggies in a large bowl to combine.

Then add olive oil, lemon juice, mint, Parmesan cheese, salt and pepper and mix.

Adjust seasoning to taste and enjoy! It’s a perfect summer salad!
