When all your kids were screaming for ice cream, my kids were screaming for s’mores! I guess they got it from me. Growing up, we would always make these at home. Later in life, I was that mom who would always bring a tray of these to classroom parties at school. S’mores are very easy to make – take a look.

S'mores Brownies
Ingredients
- 1 cup of crushed graham crackers
- 2 tbsp of melted butter
- Pinch of salt
- Truffle brownie mix by @traderjoes (I only add half of the butter recommended on the box)
- 1 tbsp of instant decaf coffee
- 2 cups of marshmallow fluff or you can melt marshmallows in the microwave for 30 seconds

Graham Cracker Crust
I usually use an 8 x 8 nonstick pan.
Start by heating your oven to 350° and spraying nonstick spray all over the pan.
In a large bowl, mix your crushed graham crackers and butter along with a pinch of salt.
Then spread it onto the bottom of the pan with your hands evenly pressing down to make a crust.
Put it into the oven for about 5-6 minutes for the crust to settle.
Brownie
While the crust in the oven, in another large bowl, prepare your brownie mix.
Be sure to add a tablespoon of instant coffee. That’s my secret ingredient! It really brings out the chocolate flavor.
As soon as the gram cracker crust has settled, add the brownie batter on top and spread it evenly across the whole pan.
Place it back into the oven for about 20-25 minutes on 350°.
At about 20 minutes, check the brownies.
While they are still a little under done, place the topping on them, and broil them for another few minutes.
Add a layer of marshmallow fluff. Place your pan back into the oven on broil and watch it as the marshmallow caramelizes. It’s the final perfect touch to this desert.
Take it out as soon as it looks nice and toasted and let it rest for a few minutes at room temp.
