Tandoori Turkey
Tandoor Turkey has a lot of flavor. Tandoori marinades typically have ginger, garlic, coriander powder, cayenne pepper, and garam masala. Garam masala is a staple in South Asian cooking and has a combination of roasted and ground cardamom, cumin, cinnamon, cloves, nutmeg and black pepper. Garam masala packs a lot of heat - use sparingly!
Ingredients
- Bone in, skinless turkey breast
- 1/4 cup greek yogurt
- 2-3 tbsp garlic/ginger paste
- 2 tbsp salted butter
- 2 tbsp olive oil
- 1 tsp garam masala
- 1 tsp turmeric
- 2 tsp ground cumin
- 2 tsp ground coriander
- 2 tsp paprika
- 2 tbsp Shan Tandoori Masala
- 1-2 tsp of salt
- 1-2 tbsp of Tandoori paste (optional. If not available, add 1 tsp of Kashmiri chili and 2 additional tsps of paprika)
- Juice of 1 lemon
Instructions
Preheat your oven to 350 degrees.
Clean and pat dry your turkey breast. Make sure it is defrosted and thawed.
In a large bowl, whisk all of the ingredients above together. It should make a thick paste.
Coat your turkey generously and marinate for at least a couple of hours, or ideally over night.
Place in the oven in an iron skillet or a racked tray.
Cook for an hour, then turn on opposite sides, and cook for 30 minutes on each side until all the sides are golden brown.
Depending on your oven it may take a bit longer to cook. It's always best to check the internal temperature to be sure its cooked through. For a turkey breast the internal temperature should be 170 degrees.
Once your turkey is cooked, remove from the oven and cover with aluminum foil for 20 minutes to let the juices distribute.
