Good Morning! It’s my favorite week of the year! Here is an easy Thanksgiving side that elevates a very ordinary vegetable. You can make my garlic parmesan roasted cauliflower all year long!

Garlic Parmesan Roasted Cauliflower
Ingredients
- 2 tbsp olive oil
- 1 head cauliflower, quartered, outer leaves and core removed, and cut into small floret pieces
- 2 tsp salt
- 1 tsp pepper
- 1 tsp chili flakes (optional)
- 2 tsp minced garlic or garlic powder
- 2 tsp of @traderjoes chili onion crunch
- 4 tbsp of Parmesan (shredded or grated)
- 2 tbsp chopped mint leaves
Instructions
Spray a large non-stick baking sheet and add the cauliflower florets.
Add the olive oil, salt, pepper, garlic powder, chili flakes, and toss and coat evenly.
Bake on 400 for 15 minutes until caramelized, soft, and browned a bit.
Remove from the oven.
Add the parmesan and the onion crunch, then toss and bake on 400 degrees for another 15 minutes.
Place in a bowl, sprinkle with mint, and enjoy as a side - not just on Thanksgiving but any day of the week! ??
