I’ve been trying to make things that the whole family can eat. I mean who doesn’t love potatoes. This is an easy recipe you can have with breakfast, lunch, or dinner. I made this side of potatoes for breakfast with some eggs this morning and it was hit with the whole family!

Skillet Potatoes
Ingredients
- 4 cups of chopped red skin or Yukon Gold potatoes. Skin on of off. Your preference.
- 1 tbsp of garlic powder
- 1/2 tbsp of @traderjoes onion powder
- 1/2 tbsp of paprika
- 2 tsp of salt
- 2 tsp of pepper
- 1 small shallot chopped
- 1/4 cup chopped green onions
- 1/4 cup chopped bell peppers
- 2 tbsp of olive oil
Instructions
Boil your potatoes whole in a pot with water for about 5 minutes.
Set aside to cool.
Once cooled chop potatoes in bite size pieces and place in a large bowl.
When all of the potatoes are in the bowl, add your bell peppers and all the seasonings and coat well.
Then heat a skillet on medium, add your oil and heat for minute.
Add your chopped shallots, stir for a minute until fragrant and then add the potato mixture and sear well.
Cook until potatoes caramelize and are tender.
Top with green onions and Enjoy!
