Baked Feta Pasta

For the past week all I kept hearing and seeing was “Baked Feta Pasta” everywhere! I might be one of the only people that doesn’t like cherry tomatoes, so I made this “fad” my own.

Ingredients

  • 8 oz of Feta Cheese
  • 1 cup Bell peppers - Sliced
  • 1/2 cup Shallots - Sliced
  • 2 Tbsp of garlic - Minced
  • 1/2 - 1 cup of Romesco Sauce - I like the Trader Joe's brand
  • 1 cup of fresh basil - Chopped
  • 8 oz of penne pasta
  • 1/5 cup of olive oil
  • Salt
  • Black pepper

Instructions

Preheat your oven to 400 degrees.

While that is heating, in an 8x8 oven safe pan, add the bell peppers, shallots, sauce, garlic, olive oil, salt and pepper.

Give it all a good mix and place the block of feta in the center. Season with an extra bit of olive oil, salt and pepper to taste.

Place the dish in the oven and bake for 30 minutes.

While the dish is baking, boil your pasta to the directions on the box. Once cooked, drain the pasta and set aside.

Remove the dish from the pan and with a fork, mash the feta in with the peppers and create a sauce.

Add the pasta and the basil to the baking dish and stirring well to combine and SERVE!

Notes

Keep a cup of pasta water on the side incase you need to loosen your sauce.
