Double Chocolate Sugar Cookie Brownies
My son is obsessed with the holiday chocolates this year, so I thought why not mix them into my favorite brownie mix? We are back to my holiday series of treats with this easy recipe below!
Ingredients
- 1 box of @TraderJoe’s truffle brownie mix
- 1/5 cup of melted organic coconut oil or butter
- 1 tbsp of vanilla extract
- 1 tsp of decaf instant coffee
- 2 eggs
- Splash of almond milk
- 1/2 bag of @hersheys white chocolate sugar cookie kisses
Instructions
In a large bowl, mix the eggs, vanilla, coffee and coconut oil well. Then, add in your brownie mix and mix together. Add a splash of your choice of milk if the batter is too thick. Spray your 8X8 baking pan with non stick spray and add the brownie batter. Preheat your oven to 350°.
While your oven is preheating, melt the white chocolate separately in a bowl using a double boiler, or in the microwave in 30-second intervals. If using a microwave, only melt the chocolate until it’s about 85% melted. Then remove and stir with a spatula until fully melted.
Top your brownie batter with the melted white chocolate. Next, use a fork and swirl the melted white chocolate all over the batter. Place in the oven on 350° for 20 to 30 minutes. Test with a toothpick or a fork in the middle to see if it’s done. If the toothpick comes out clean, your brownies are done! Enjoy!
