Fridays are for cleaning out the fridge so you can repack it again on Sunday. I was so happy to find some leftover taco meat from our taco Tuesday, because it’s cut my time in half to make this delicious, carb free, protein packed meal!

Stuffed Peppers
Instructions
Heat a large pan on low to medium heat.
Add a tsp of oil, then bell peppers, onions, and jalapeños.
Next add in your taco meat and corn and mix well.
Since the taco meat had such great flavors and spices already, the veggies will give the filling more body.
Once the filling is warm throughout, turn the stove off, stuff these beautiful Pablano peppers, and top it with cheese.
You can use any kind of cheese you love.
I used @kraft_brand Mexican melting cheese and then placed the peppers in an oven safe dish under the broiler for a few minutes until the cheese is nice and bubbly. It’s ready to serve! Enjoy! ?
