Sesame Teriyaki Salmon

Hello my picky eaters! I’m sorry I’ve been MIA. I’ve had a lot going on at home and took a much needed social media break. I know we all have those days where we feel like things are moving too fast and we just need to slow life down. This is especially true during the pandemic. So, in trying to slow my life down, I decided to clean the fridge out today. ?  Out of that mess I made the most delicious meal: my crispy teriyaki salmon on a bed of crunchy slaw! I’ll definitely be making this at least once a week since we ALL (including the kids) loved it so much.

Sesame Teriyaki Salmon

Ingredients

  • 2 salmon fillets
  • 3 tbsp of @kikkomanusa garlic onion teriyaki sauce
  • 1 tbsp Low sodium soy sauce
  • 1-2 tsp Sesame oil
  • 1 tbsp canola oil
  • 1/2 tbsp Sesame seeds
  • 1/2 tbsp minced garlic
  • 1/2 tbsp minced ginger
  • 1 tsp of chili paste or @sriracha_fg
  • Red bell pepper
  • Red cabbage
  • Green cabbage
  • Carrots
  • Green onions
  • Salt
  • Pepper
  • Lime juice of 1 fresh lime

Instructions

In a large bowl, mix together the teriyaki sauce, soy sauce, garlic, ginger, chili paste, and 1 teaspoon of your sesame oil and set aside.

Take out about 1 tablespoon of your mixture and set aside.

You’ll use this to brush onto the cooked salmon later.

Add your salmon fillets into the marinade and keep in the fridge for up to an hour to let all the flavors soak in.

If pressed for time, you can let it sit for about 10 minutes to have dinner ready a little bit faster.

In another large bowl, add all of your vegetables and 1 teaspoon of sesame oil, salt, black pepper and a squeeze of lime and set aside.

Heat a large pan on medium heat, add 1 tablespoon of canola oil, and add your salmon marinade side down and don’t touch it.

Let it get crisp and spoon on the marinade you had set aside earlier on the other side.

Use a fish spatula when you start seeing a little bit of a char, flip the fish just once, and don’t touch it until the second side looks done to your liking.

Brush the top of the salmon fillet with the reserved teriyaki marinade and sprinkle with sesame seeds.

Place the salmon on top of your crunchy salad and enjoy!
