You know how some dishes just taste even better after a day or two? Well this is one of them! This is my version of a middle eastern tabbouleh salad. It’s so tasty that you’ll forget it’s good for you ?

Ingredients
- 2 cups of Parsley (chopped)
- 1 cup of tomatoes (chopped)
- 1 cup of cucumbers (seeded and chopped)
- 1/2 cup red onion (minced)
- 1 cup chickpeas (look at my seasoned chickpea recipe from the kale and garbanzo bean salad)
- 1/4 cup light crumbled feta cheese
- 1/5 cup mint (chopped)
- 1 tbsp lemon zest
- 2 tbsp of olive oil
- 1/5 cup lemon juice
- Salt
- Pepper
Instructions

Toss all the ingredients together in a large bowl and enjoy.
