The Ultimate Summer Salad

Throwing it back, way back to my very first post! I remade my simple watermelon summer salad. It’s so refreshing you’ll want to have it every weekend with the family.

Ingredients

  • 2-3 cups of watermelon cut in cubes
  • 1 cup arugula
  • 1 cup baby spinach
  • 1/3 cup feta cheese
  • 1/5 cup salted pistachios
  • Salt
  • Fresh cracked black pepper
  • Juice of 1 lemon
  • 1/2 tbsp of extra virgin olive oil

Instructions

Toss all the ingredients above in a bowl and enjoy
