Garlic Cajun Shrimp Scampi

Hi Everyone! Here’s a recipe that hits very close to home for me and my family. Growing up my dad used to take me, my sisters, my mom, my grandma to Red Lobster at least once a month. The one thing we always ordered was the shrimp scampi. It was some thing we all shared around the table and have so many great memories having that dish. A few years ago, I decided to re-create this dish while adding my own take on it. It has the same buttery flavor, but with an extra twist of lemon juice and a kick of spice.

Garlic Cajun Shrimp Scampi

Ingredients

  • 1 pound cleaned deveined shrimp
  • 3 tbsp of unsalted butter
  • 1 tbsp olive oil
  • 1-2 lemons zested and juiced
  • 6 cloves of garlic minced
  • 1 tsp of Cajun seasoning
  • 1/2 tsp chili flakes (optional)
  • 3 tbsp minced parsley
  • Salt and pepper

Instructions

Start by heating a medium pan on low heat.

Add in your butter, olive oil, and minced garlic and stir until the butter has fully melted.

Next, add your lemon zest and your chili flakes and stir until fragrant.

Season the shrimp with Cajun seasoning, raise the temperature to medium, and add your shrimp seasoned side down in the pan.

Then season the other side.

Shrimp cooks very fast so cook one side for 2 to 3 minutes and flip to cook the other side for the same amount of time.

Once you flipped your shrimp and it’s been cooking for about a minute, add salt, black pepper and lemon juice and stir.

When the liquid comes to a boil, turn off the heat and garnish with your minced parsley and serve with noodles, rice, or crispy slices of sour dough bread.
