I did it. I caved. I made another cake. This semi homemade baker strikes again, and I’m so glad I did! This cake is SO GOOD you have to try it. It’s perfect for Valentines Day!

Do you want a quick dessert that the whole family will enjoy? This cake is so quick and easy that your family will turn it into a fun Valentine's Day project. I made fresh strawberry cream cheese frosting to top this delicious, organic confetti cake. Who says you always need to bake from scratch for the best results? There are some amazing boxed mixes that are organic and all the measuring is done for you.

Ingredients

  • Cake
  • Annies Organic Confetti Cake Mix
  • Frosting
  • 8 oz of organic cream cheese
  • 4 oz of unsalted butter
  • 1/2 tbsp of vanilla extract
  • 1/2 cup of freeze dried strawberries - ground up
  • 2 cups of organic powdered sugar

Instructions

Make the cake according to the boxed instructions - I substituted milk instead of water

Place on a drying rack to cool.

Frosting

In a mixer or with a hand blender, whisk together butter and cream cheese. For the best results, make sure the butter and cream cheese are at room temperature.

Once combined, add your vanilla extract and the powdered sugar. Whisk until combined everything is combined well.

Then with a spatula, gently mix in the freeze dried strawberries.

Once the cake has cooled, top with your frosting and enjoy!

Notes

If the freeze dried strawberries don't give you enough of a red color in your frosting... you can always add a drop of all natural food coloring.
