Salmon Tacos

Ingredients

  • Marinade
  • 3-4 pieces of boneless, skinless salmon
  • 1/4 cup of Trader Joe’s margarita mix
  • 1/2 lemon juiced
  • 1/2 lime juiced
  • Salt
  • Pepper
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 3 tbsp of avocado oil
  • Slaw salad
  • 3 cups of shredded slaw mix
  • 1/4 cup of chopped cilantro
  • 1 tbsp Apple cider vinegar
  • 1 tbsp avocado oil
  • 1 tbsp of honey
  • Dash of ground cumin
  • Dash of paprika
  • Salt
  • Pepper
  • 1/2 - 1 Shallot sliced
  • 1 - Anaheim pepper or what ever pepper you prefer

Marinate the salmon with all the ingredients above. Cover well and refrigerate while it marinades for 20-30 minutes. Do not marinade over night because the citrus juice will cook the salmon.

While that’s getting flavorful, make the slaw salad and chop up the veggies to sauté with the salmon. As an extra topping for your tacos, you can buy store bought pico de gallo or make your own.

Heat 2 tbsps of avocado oil (or any other high temp oil) in a pan on medium heat. Gently place the salmon into the pan and coat with Cajun seasoning. I seasoned only one side so the kids can tolerate the spice level. Sear on both sides to your desired doneness.

Shred the salmon, add the slaw and the toppings, and serve with corn tortillas, salad or rice. Enjoy!
