Green Chutney Chicken Kabobs

Happy Sunday! It’s a perfect day to grill some kabobs! This dish is a staple in my house. Now that the kids are getting older, they eat everything we eat and they love these kabobs with some rotis! I try to always have a batch frozen for a quick dinner!

Serves: 2-4
Prep Time: 1 hour (includes marinading time) Cooking Time: 25 Minutes Total Time: 1 hour 25 Minutes

Ingredients

  • 1-2 pounds of ground chicken breast, or a mix of dark and white meat if you’d like
  • For the marinade:
  • 2 tbsp of Swad cilantro chutney
  • 2 tbsps Extra Virgin Olive Oil
  • 2 tbsps of Shaan’s Kabob Masala (add more if you like spicy)
  • Juice and zest of 1 lemon or lime
  • 1/2 jalapeño (with or without seeds, depending on the level of spice you like)
  • 1/2 - 1 tbsp of whole or ground cumin
  • 2 tbsps of ginger garlic paste
  • 1 small onion or a large shallot
  • 1/4 cup of cilantro
  • 1 tsp of salt

Instructions

1

Place all of the ingredients for the marinade, except the ground chicken into the food processor and chop.

2

In a large bowl, add the chopped mixture to the ground chicken and mix well.

3

Refrigerate overnight. If no time, I recommend for at least 2 - 3 hours so the flavors can blend well.

4

Shape into whatever kabob shapes you prefer and sear off in a large pan with 1-2 tbsps of avocado oil, or another oil to your liking. I seared the kabobs on a grill pan.

5

You can chop up some bell peppers and onions, season them with some black pepper, salt, and olive oil and sear them along with the kabobs. They make a delicious side!

6

Make extra because this will be a hit with the whole family. ?
