Have you ever gone to a dinner party where you tried that one dish that everyone wants to take home at the end of the night? Well my picky eaters, this is that dish for my family. They all want some cornbread casserole with cranberry sauce to take home, and it is such an easy, one pan dish to prepare. I will post my cranberry sauce recipe later this week.
Cornbread Casserole
Ingredients
- 1 packet of cornbread mix
- 1 can of creamed corn
- 1 can of sweet corn kernels, drained
- 4 tbsp of unsalted butter, melted
- 1 egg
- ½ cup of sour cream
- ½ cup of cheddar cheese
- Splash of cream or half and half
- Chives
Instructions
Preheat your oven to 350 degrees.
In a large bowl, whisk all of the ingredients together making sure everything is combined well.
Spray an oven safe pan with non-stick spray, and pour your batter in evenly.
Reserve the chives for garnish later.
Place the pan in the oven for 40 minutes, or until the center of your casserole is semi firm.
Let it rest for a few minutes until it’s ready to serve. Enjoy!
