Ready, Set, Guac

I mean…do I even need to say anything about this picture? I’ll have an order of guac, with extra guac, with a side of guac please! ? I get a lot of people asking me if I put tomatoes in my guac and the answer is yes!! I personally do like tomatoes in my guacamole. I made two versions last time for the family, adding jalapeños in the adult version, and topping the kids version with tomatoes. Here is the easiest guacamole recipe that will stay well in the fridge for a couple of days. It’s the perfect side for this holiday weekend!

Ingredients

  • 3 large ripe avocados
  • 2 large limes (juice and zest)
  • 1/4 cup red onions finely minced
  • 1 small jalapeño without the ribs and seeds
  • 1 small tomato chopped
  • 1/4 cup fresh cilantro chopped
  • Kosher or sea Salt (to taste)
  • 1 tsp garlic powder (optional)

Instructions

Start by mashing the avocados with the zest and half of your lime juice.

Then, add your onions and jalapeños, and salt and mash those along with the avocado to blend the flavors.

Then add your cilantro, the remaining juice and tomatoes, and mix.

Taste for seasoning and add garlic powder if you wish.
